Chapter 1 - Recipe 1: Vanilla Cupcakes

Vanilla Cupcakes

Makes: 12 cupcakes

Prep Time: 15 mins

Bake Time: 18–20 mins

Ingredients:

1 1/2 cups (190g) all-purpose flour

1 1/2 tsp baking powder

1/4 tsp salt

1/2 cup (115g) unsalted butter, softened

1 cup (200g) granulated sugar

2 large eggs

2 tsp vanilla extract

1/2 cup (120ml) whole milk

Instructions:

Preheat oven to 350°F (175°C). Line a muffin pan with cupcake liners.

In a bowl, whisk together the flour, baking powder, and salt.

In another bowl, cream the butter and sugar together until light and fluffy (about 2–3 minutes).

Add the eggs one at a time, beating well after each addition. Mix in the vanilla.

Add the dry ingredients in 2 parts, alternating with the milk. Mix until just combined—don't overmix.

Divide the batter evenly among the cupcake liners (about 3/4 full).

Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.

Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Optional Vanilla Buttercream Frosting:

1 cup (230g) unsalted butter, softened

3–4 cups (360–480g) powdered sugar

2–3 tbsp heavy cream or milk

1 tsp vanilla extract

Pinch of salt

Directions: Beat butter until creamy, then gradually add powdered sugar. Add vanilla, salt, and cream until fluffy.
